La Cuisine 2018 - Archipelago Class

La Cuisine 2018, cooking competition organized by Association of Culinary Professionals (ACP) was once again held at Jiexpo Kemayoran Jakarta during SIAL Interfood 2018 from November 21st - 25th, 2019. There are 17 classes competing for this year and some of the classes were highlighting Indonesian Cuisine such as Traditional Jajanan Pasar in Modern Presentation, live cooking Sate Nusantara using charcoal and traditional grill and team of cooking for Nasi Tumpeng and Indonesian Gastronomy. In addition, there is Archipelago Set Menu as a new class this year, which collaborated with Jakarta Hotels Associations (JHA).


Professional Class competition was held starting on the 2nd days of SIAL Interfood 2018

For the Archipelago Class, the competition is divided into 2 classes for Junior Chef with participant from Tourism school and Tourism Academy and Professional class from JHA Member hotels. Each contestant will be judge by their food, table setting and their service.


First day of the competition is dedicated for Junior Chef with 4 participants from SMKN 38 Jakarta, STP Trisakti, Jakarta International Hotel School and Prasetiya Mulya. They have been trough sessions of mentoring program with F&B team from Fairmont Hotel Jakarta, Le Meridien Jakarta, The Dharmawangsa Jakarta and Shangri-La Hotel Jakarta to prepare them for the competition. Continue with Professional team to compete on the following days. 15 hotels compete in this class where they showcased incredible talents, creativity and presentations through their food, table setting and service.

During the competition, as a member of the World Association of Chefs Societies (WACS) and in order to assist and improve the standard of culinary fare in Indonesia, ACP has invited a number of experienced qualified WACS certified judges to judge the competition. The 2nd LaCuisine Competition have endorsement from WACS as National Competition.

Judges review, where all contestant recieved feedback from the judges. A very intense session for the contestant.
